Refugees Since 1948 Destiny has always played a critical role in changing people’s lives, the same as happened with Mr. Saliba Salameh and his family. An-Nakba in 1948 was the main reason for his migration from Jaffa to Bethlehem, the birthplace of Jesus Christ. He settled in Bethlehem and began a small project of selling popular food such as Falafel, Hummos and Foul after he had been carrying on Ar-Roumi bakery store in Jaffa. He began his small work and taught it to his sons Afteem, Bishara, Na’im, Farouq and Boutros, but before all he taught them love and unity which have been the base for their success and continuance, and helped them to make their restaurant a very famous one. The restaurant has been named after the name of the elder brother Afteem, and it has become a significant part of Bethlehem and Palestine heritage. This is their story, a story that began in 1948 and is a living example of a strong nation that doesn’t surrender despite all difficult circumstances of life. This is the story of refugees within their own country ……. It is the story of Afteem Restaurant that though it has become a part of Bethlehem heritage, it still holds the name of Jaffa and it will do it for ever. Since 1948 Afteem Al Yafawi Restaurant is the symbol of authenticity. اسامة عواد/PNN- في العادة يخرج الناس من بيوتهم صباح كل يوم في بيت لحم، محدقين في ارجاء المدينة التي تتسرب الشمس الى ازقتها، معلنة اشراقة يوم جديد، يستمتع الكثيرون بصوت العصافير وباصوات الباعة والتجار للترويج لبضاعتهم. وبين تلك المحلات في مدينة بيت لحم هناك محل تفوح منه رائحة فلسطين وتراثها… رائحة تجذب الكثيرين حتى من اغترب وعاد لزيارة المدينة، محل يزوره الغني والفقير على حد سواء وتتلاشى فيه مستوياتهم المعيشية ليتواضعوا في لقمة عيش اجدادهم التي تعودوا عليها منذ 50 عاما. من يزور هذا المكان لن ينسى طعم ما يتناوله فيه من فلافل وحمص وفول… “محل افتيم اليافاوي للفلافل”، انه المحل الذي بات معروفا جدا في بيت لحم. مدينة بيت لحم اكتسبت شهرة كبيرة حيث ولد فيها السيد المسيح عليه السلام، يزورها سنويا اعداد كبيرة من السياح الاجانب والعرب، ومنهم من يأتي اليها خصيصا ليزور كنيسة المهد ويأكل من “محل افتيم اليافاوي”. العديد من السواح ايضا يستلذون بطعم الفلافل لاول مرة في حياتهم والذي يطهى في اشهر ساحات مدينة بيت لحم ساحة كنيسة المهد، ومنهم من يطلب الوصفة لصنعها. خمسة أخوة، هم: افتيم، نعيم، بشارة، فاروق، وبطرس، كرسوا حياتهم منذ العام 1951 للعمل في محل واحد اسموه على اسم الاخ الاكبر افتيم صليبا سلامة، حيث كان والدهم في البداية يساعدهم ويساندهم حتى يصبحوا من اشهر من يصنع الفلافل والاكلات الشعبية في بيت لحم. وبعد ان جار عليهم الاحتلال وهجرهم من يافا الى بيت لحم في عام 1984حيث استقروا في محل صغير بمحاذاة مركز الشرطة في المدينة، وعند انسحاب الجيش الاسرائيلي من بيت لحم وتسليم المهام الامنية للسلطة الفلسطينية، قررت الاخيرة ومن خلال مشروع بيت لحم 2000 هدم مركز الشرطة القديم وبناء مركز جديد بات يعرف اليوم بمركز السلام، وبذلك خسر الاخوة الخمسة اول محل بنوه سويا في بيت لحم حيث كان ضمن المباني التي شملها قرار الهدم، لكنهم لم يستسلموا… يقول احد الاخوة في محل افتيم: ” قررنا ان نشتري محلا صغير مقابل المحل الاول لاننا لم نرغب بأن نخسر المكان الذي اشتهرنا فيه، لكنه كان محلا بلا نوافذ وفيه باب كبير واحد فقط يدخل منه الهواء. وبالرغم من انتقالنا للمكان الجديد الا ان الزبائن ما زالو يزوروننا نظرا لما نقدمه من نكهة مميزة للطعام الشعبي وخصوصا الفلافل، حتى ان الاعداد زادت فهناك اناس يزرورنا من شمال فلسطين”. واضاف” نحن لا نعتمد كثيرا على السواح الاجانب بل ان اهل مدينة بيت لحم والمدن المجاورة لها يزورزننا كثيرا ويتردد علينا الكثير من الوجوه الجديدة يسألون عن فلافل افتيم اليافاوي”. وتابع ” من بين الشخصيات التي كانت تزورنا شخصيات عالميا لدرجة انني نسيت الكثير منها لكثرتها ولصعوبتها، ومن الاسماء التي تذكرها ايضا عباس زكي، وماراتينوس…. فالرئيس الراحل ياسر عرفات عندما كان يزورنا في بيت لحم كل عيد ميلاد مجيد كان يطلب من الحراس ان يأكل من محل افتيم اليافاوي، وكان حرس الرئيس يأتون كل صباح خلال فترة مكوثه بالمدينة يطلبون الفلافل والحمص والفول للرئيس”. احمد الجنازرة من بيت فجار كان احد الزوار لمحل افتيم، قال:” عندما اقرر القدوم الى بيت لحم اخرج دون ان اتناول فطوري، واكون على يقين انني سأزور محل افتيم لانه يقدم اميز والذ الاكل الشعبي في بيت لحم، حتى انني اشتري الفلافل واخذه معي الى البيت واتناوله على العشاء مع عائلتي حيث انهم يفضلونه ايضا”. وقال احد الجالسين في المحل ” منذ حداثتي وانا ازور هذا المكان مع والدي وما زلت حتى الان استمتع بزيارته واشعر انني اعود لطفولتي عندما كان والدي يمسك بيدي ويأتي بي الى هنا”. ويقول الاخ الاصغر بينما كان يسكب خلطة الفلافل في الزيت:” نحن نعمل بجد على توعية الاجانب ايضا ممن يزرورننا في المحل بان هذا الاكل هو فلسطيني الاصل حيث ان اسرائيل تروج على انه يهودي الاصل وانه من تراث اسرائيل “. واضاف :” هناك صورة داخل المحل مرسوم فيها صورة “ساندويتش” من الفلافل وعلى هذا الرغيف علم فلسطين، وانا شاهدت نفس الصورة على شبكة الانترنت لكن بدل العلم الفلسطيني ووضع العلم الاسرائيلي كي تروج اسرائيل انها من جاءت بهذه الاكلة والشعبية الى فلسطين المحتلة، وفي الحقيقة انا اتأثر كثيرا عند رؤية جهدنا وتعبنا طوال السنين يروج بالنه اسرائيلية وانه من تراث اسرائيل”. مطعم افتيم اليافاوي تغلب عليه الصيغة العربية القديمة بحيث يشعر كل من يزوره باننا ما زلنا نحتفظ بهذه القيم ونحرص على استرجاع ما سرق منا من تراث، كي نبقى مرفوعي الراس بحبة فلافل فيها رائحة اجدادانا الذين سلبت منهم ارضهم وبيوتهم واستشهد ابناؤهم على هذه الارض الطاهرة ، وهجر معظم اهلها منها قسرا وذهبوا باحثين عن عالم جديد قد يعطيهم ربع ما سلب منهم.

Pod Norenami is located on the charming ulica Krupnicza, between museums, the university, and two of Kraków’s theatres, and among other restaurants in a place which has the well-earned reputation as the city’s gastronomic quarter. The restaurant is on the route connecting the heart of the Old Town with the green parkland of Błonia meadow, another delightful spot. The spacious interior of Pod Norenami connects the secrets of a 19th century Kraków house with the traditions of Japan – directly evoking the spirit of Feliks ‘Manggha’ Jasieński, who brought the culture of the Far East to our city over one hundred years ago. Just as painting and music can be art, so the rich flavours and aromas of the kitchen, beautiful porcelain, and every other tiny detail can be admired. Together with our chef Paweł Albrzykowskim, we decided to prove that vegetarian cuisine does not have to be boring and colourless… on the contrary, it can be a realisation of the concept of fullness of flavour – which for centuries has been the goal of Chinese and Japanese chefs. We offer a wide range of delicious, freshly cooked, organic vegetarian food to the Brighton community. The café is a light, airy and open plan with ample seating on two levels. In summer and on hot sunny days, tall, ‘French’ doors can be opened out into the street where there is extra outside seating. The name of the Cafe is inspired by the decoration of the Cafe with old Singer sewing machines. The Cafe is located in the old part of the town of Beit Sahour in an old building with the particular natural stones and a high vaulted ceiling. The interior of the Cafe consists of second hand and recycled furniture. Singer Cafe has a library with English and Arabic books. The books were donated by the family of Roshan-Abbas who left this world aged 22 years old, in his commemoration. Singer Cafe offers a space for artists to exhibit and perform. Foreigners who are planning to visit the Westbank or who are already in the country, are welcomed to Singer Cafe to meet Palestinians in a welcoming environment.
