The story behind Nanuchka is just as interesting as the menu. For years, the restaurant served traditional Georgian cuisine of meaty dumplings, cutlets, stews, and the like. But when owner and chef Nana Shrier became vegan in February 2014, so did her restaurant. Now it carries the proud title of ‘the first Georgian Vegan restaurant,’ where Shrier can be found frying spinach and bean cutlets instead of chicken, and stuffing traditional Georgian pastries with mushrooms instead of minced beef. One thing has remained the same though: The nostalgic décor with red walls adorned in Nana’s favorite poetry and Communist Era memorabilia.

We purchase the highest quality ingredients available, and make use of the great local produce Chattanooga has to offer when possible. We use practically no oil in our cooking, and instead prepare our own vegetable stock in house, which is used to enhance flavor without adding unnecessary fat or sodium. When preparing our dishes, we are thoughtful about every cooking technique, ingredient, and spice, in order to provide simple meals with few ingredients and exceptional flavor. Although there is absolutely no meat or dairy in any dish or baked good we prepare, we believe that everyone, no matter their usual diet, can benefit greatly from incorporating vegan, plant-based meals into their lifestyle.

Cheese & Chocolate, is one of Cardiff’s newest vegan street food business. Their aim is simple, providing the best tasting cruelty free comfort food for our fellow vegans to enjoy! The idea of Cheese & Chocolate came about last year when co-founder James (a veggie at the time) stated that he’d struggle to make the jump to being vegan as he’d miss eating cheese and chocolate too much. He suggested that it’d be great if there was a place in Cardiff where he could easily get vegan substitutes for his favorite cheesy, chocolatey dishes. At that moment, the idea for Cheese & Chocolate was created. James put the idea to his girlfriend Rhiannon (A long term vegan) who was eager to join james in turning his idea into a reality. They created a repertoire of the best, tried and tested, cheesy and chocolatey recipes that will appeal to vegans, veggies and ominis alike.
