Using special preparation, we made our original wheat flour noodle of café the 6BT to have the same texture and flavor of regular wheat flour noodle.About Soup
For the base of the soup, we use konbu (kelp) of Hokkaido’s Rausu, shiitake mushrooms cultivated on the bed wood from Shizuoka and enokidake (velvet shank) grown in the source water in Shinshu, adding several vegetables of our choice to slowly boil it to create the same flavorful and deep taste of the soup made of animal foodstuffs.Address: 1F 9-6-26 FonteRoppongi Akasaka

New to Tokyo, we decided to go to Cafe the 6BT randomly, based on it’s proximity to us and that it was vegan. What a hit! It’s right in the center of a really busy street, and was really good! We both got set meals, and weren’t thrilled by the appetizer plates, but the mains we’re great. I got the Cooymilk Tantan noodles, which were really tasty, but surprised me by being a cold meal. My dad got the Stir-fried soy meat with chilli sauce, and it was absolutely amazing. I don’t know what they do with the ‘meat’ or the sauce, but I do know I want to go back for more and to figure out this amazing recipe. The ice cream that came for dessert had a surprising, unique flavor, also very good.
