I was happy to see vegan options labeled on their menu, and their tofu scramble was actually very flavorful. Apparently they used to have a really good vegan tempeh reuben on their menu but we didn’t see it this time around. Hopefully they bring it back!
I finally got to the airport early enough to have a sit-down meal at Root Down in DIA before a recent flight. I’ve had Root Down a few times before at their Denver location, and I consistently feel just okay about the experience, especially considering the price. At the DIA location I had the tofu scramble, which was flavored well, but left an oily residue in my mouth each time I took a bite– not pleasant. The potatoes on the side were great, and the super seed mixture in the scramble was a nice touch that added a texture I enjoyed, but I’ve had tofu scrambles I liked much better than this one. I liked the overall vibe in the place too, despite it being a bustling airport restaurant. I get why people like Root Down, but I think I’ve learned that the vegan options just aren’t for me.
