Located in the Bellagio, this upscale restaurant by Chef Roy Ellamar prides itself on seasonal farm fresh ingredients. They are located in the same location as the former Sensi restaurant, which used to have several very tasty vegan option. The Havest restaurant just opened it’s doors on December 24th, 2015 and currently only offers a couple of options vegans, but based on their history and willingness to customize meal options for their vegan customers, they may offer more vegan options in the months to come.

We ate here just a day after Harvest, which was previously the vegan-friendly Sensi, opened. Understandably, the restaurant was working out a few kinks, but our experience was positive overall. There were only two main entrees marked under the Vegetarian/Vegan section, both could be made vegan by omitting the non-vegan ingredients. A few of the appetizers could also be made vegan. Everything was very well presented and tasty. My personal favorites were the Charred Brussel Sprouts (surprising as I’m usually not a fan of brussel sprouts) and the Farro Piccolo Porridge. Everything had very simple tastes and seasonings, created to bring out the taste of the vegetables rather than lathering them in sauces, which was very well done. One of the appetizers we ordered did come with its usual yoghurt sauce, so make sure to check that everything is vegan. The staff was very apologetic and comped the dish for us, which was nice. The staff also informed us that they will be able to make special orders and have more vegan dishes in about a month or so, when the restaurant is properly up and running. The old restaurant, Sensi, used to be able to make special vegan menus if you gave them advance notice. As it is the same chef at Harvest, I would imagine they would be able to provide the same.
Overall, the dishes were very tasty, and I will be happy to return, especially once they add some more vegan options.
