Yesterday we got a small suitcase full of vegan treats from home, thanks to my amazing mother and friend Amber who delivered it to us at the San Jose airport.
So today I made a tomato, onion, and “cheese” chickpea omelette, with maple smoked tempeh, hash browns, and left over seitan riblets from last nights dinner, and a chocolate banana almond butter and hemp seed smoothie for breakfast.
Oh my goodness, they are fantastic! Last night we had chocolate chia seed pudding with sliced mangoes, this afternoon we enjoyed mango smoothies, and I think I will be making a warm mango crumble with coconut whipped cream for dessert tonight.
