In 2011 I traveled with my father and my kids on a road trip around his native home of Morocco. Today, I found myself reminiscing about our time walking around some of the souks and medinas we visited in Rabat, Casablanca, Marrakesh, and Essaouira.

Here’s a throwback to some vegan pancakes I enjoyed with my mom at lunch last weekend at Watercourse Foods in Denver, CO. My mom has been vegan now for over two years and I couldn’t be more proud of her!
SLC is pretty spectacular! I would definitely suggest going there, as most people don’t ever consider it so it’s not that pricey… plus they have the most amazing vegan french pastry shop…. where you will spend all the money you saved on everything else 😉
