At Simple Life, Mdm Tracy Ngo (the co-founder and owner of Simple Life Healthy Vegetarian Restaurant) developed healthy recipes by adopting more natural ingredients in the menu, without compromising taste and aesthetic values. One good example would be our chef’s recommendation, the Simple Life’s healthy nasi lemak, which is completely vegetarian. Cooked with extra virgin coconut oil, with sambal made from carrots and cabbage, it is both spicy and delicious, resembling the usual nasi lemak.
Many people nowadays are unfamiliar with healthy food, let alone eating healthily. It is a common
misconception that healthy foods are bland or raw. Tracy Ngo’s recipes seek to raise awareness about healthy eating, and prove that healthy food can be delectable and beneficial to our health. Tracy is a renowned health-conscious chef in Melaka and is also an expert in developing recipes which are a fusion of tastes and flavours of the East and West. Her special and unique dishes have caught the attention of many, and have attracted a wide range of customers. Our famous dishes include Lei Cha with Brown Rice, Ginger Extract with Brown Rice Mee Sua, Vegetarian Nasi Lemak, Curry Laksa and Popiah.
Co-founder of Simple Life, Mr Lai Kuen Ban is a strong believer of incorporating healthy eating into our daily lifestyle. He believes that we can practice a healthy vegetarian diet by consuming more fresh vegetables and fruits and avoid processed vegetarian products, like vegetarian ‘goose’, ‘chicken’ and ‘fish’, which mainly consists of seasoned flour with colouring and additives. Brown rice is also one of Simple Life’s signatures. Our dishes do not contain the strong smell and starchy taste of brown rice, which is one of the main reasons why brown rice is disliked by many. In fact, our customers prefer brown rice, which is high in fiber and vitamin B Complex, to refined white rice, which has high glucose content.
At Simple Life, we like to focus on the nutritional aspects of eating. We make it a priority to ensure that all our meals are 100% organic and natural, avoiding artificial flavouring or colouring, additives, preservatives and most importantly MSG (monosodium glutamate). We use healthy ingredients such as brown rice, multi grains, herbs, legumes and lots of vegetables in all our dishes. We stick to our belief that a healthy diet leads to healthy life.
At Simple Life, we emphasize on 4 core principles of healthy eating, which are:
1) Low in salt (sodium)
2) Low in sugar
3) Low in oil
4) High in fiber
We also adhere to the following regimes when preparing our dishes:
a) Serve foods with natural and organic ingredients which are pesticide-free
b) Use brown sugar in cooking instead of refined sugar, which can cause indigestion
c) Avoid using coconut milk for cooking curry. Replace with cashew nut powder which is similar in taste
d) Cook with extra virgin coconut oil
e) Highly recommend Brown Rice/ Noodles/ Vermicelli to customers
f) Using natural seasoning, alkaline water and avoid using MSG, colouring and preservatives
