    Hi! My name is Erin and I am currently serving as a Peace Corps Volunteer in Colombia. I’ve been here for 10 months and have 17 to go. I live in a small town on an island in the middle of a river, and being vegan here has presented me with many challenges. My access to vegetables is limited and sporadic, and I don’t have a supermarket in my town. My kitchen is very simple and includes a stovetop, fridge and blender. This has pushed me to be more creative in my cooking as I try to stay healthy with basic ingredients etc. I miss my kale salads etc. like no other, but I’ll never take them for granted again! Most people in my town have never met a vegetarian before, and I can see why – it is not easy! Socially, being vegetarian can be awkward. I love sharing food with Colombians and enjoying what I can of Colombian cuisine as well. My favorite – the fresh fruit juices. In my town, I teach entrepreneurship classes, work with associations to start small community banks, and advise local business owners on business practices.
